It is a dried chili with dark skin and wrinkled and when fresh is called Chilaca. It is also one of the most popular chilis as part of the team, along with chile ancho and chilemulato, which form the "holy trinity " of Mexican seasoning, used in the preparation of differenttypes of Moles, especially the Mole Poblano. They are also excellent for sauces of all kinds. Hispiquant is clearly strong but without reaching the levels of fruits like Habanero chili or Cascabel. It is very versatile for Mexican cuisine, used especially in soups. Also is sold whole or in powderas a seasoning and one of its most popular uses is in the preparation of the famous salsaborracha. It is also prepared sliced and fried, as classic accompaniment of famous Tortilla Soupor Tarascan Soup a typical dish from the state of Michoacan and Mexico City. It is also widely used as a Chile Relleno giving this plate an exquisite and delicate taste.
