Huitlacoche [Wee-tlah-KOH Cheh] has been a Mexican delicacy for decades since Aztec times. Also known as corn truffle, corn fungus, huitlacoche and cuitlacoche, corn smut is a grey fungus that attacks corn and causes it to swell dramatically. Huitlacoche has an earthy, smoky flavour, often described as a flavour between mushroom and corn. They are collected and sold at the markets during July and August. It's a must-try if you appreciate the art of Mexican cooking.
