Huitlacoche [Wee-tlah-KOH Cheh] has been a Mexican delicacy for decades, since the Aztec era. It is also known as cornflower, corn mushroom, huitlacoche and cuitlacoche, Majs smolk is a gray mushroom that attacks corn and makes it swell dramatically. Huitlacoche has an earthy, smoky taste, often described as a taste between mushrooms and corn. They are collected and sold in the markets during July and August. It's a must to try if you appreciate the Mexican cuisine.
