Chipotle (in Nahuatl chilpoctli or xipoctli, meaning smoked chili) comes from mature jalapeño peppers that have been allowed to ripen to redness and then dried. Like most chilis, it can be used either dried or marinated in a soft brine, which allows it to "release" its flavor. The dishes in which these chilis are used vary across different gastronomic regions in Mexico, such as Chipotle Chicken, Tlalpeño broth, Pork Meatballs, Shrimp in Chipotle style, and certain sauces for steaks. However, even when used as the main ingredient in recipes, its more popular and primary use is as a complementary addition to other types of dishes, like Mexican Tortas, Mexican snacks, or for breakfast eggs at home. Chipotle is one of the most flavorful chilis found on tables in Mexican households. Note that the main form of preparation is usually marinated in brine to release its flavor. Its spiciness ranges from average to strong, depending on the quantity used and how it is cooked or incorporated into the recipe. Its flavor is especially appreciated in creations and gourmet specialties such as pâtés, cheeses, flavored breads, dips for snacks, or fine chocolates.
