Homemade tacos al pastor kit
KIT Includes:
- Dried Guajillo, 100 g (A01196)
- Dried Ancho Chilli, 100 g (A01191)
- Achiote, El Yucateco, 100 g (YU020)
- Corn tortilla, 12cm in diameter
Tacos al pastor recipe:
Ingredients:
- 500 grams of pork (e.g. shoulder or loin)
- 2-3 chile ancho
- 2-3 chiles guajillo
- 1 yellow onion, chopped
- 4 cloves of garlic, crushed
- 1 tsp cumin
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cinnamon
- 1/4 tsp cloves
- 2 tbsp achiote paste
- 2 tbsp apple cider vinegar
- 2 Tbsp pineapple juice (optional)
- Fresh coriander, chopped
- Lime wedges
- Corn tortilla bread
- Fresh pineapple, in small pieces
Instructions:
1. Remove the seeds and stems from the chile ancho and chile guajillo. Place them in a bowl and pour over boiling water to soften them. Leave them in the water for about 15 minutes.
2. Remove the chillies from the water and place them in a blender or food processor along with the chopped onion, garlic, cumin, dried oregano, salt, black pepper, cinnamon, cloves, achiote paste, apple cider vinegar and pineapple juice. Blend to a smooth paste.
3. Cut the pork into thin slices or strips. Place the meat in a bowl and pour over the prepared marinade. Make sure the meat is evenly covered with the marinade. Cover the bowl with plastic wrap and let the meat marinate in the fridge for at least 2 hours or overnight for the best flavour.
4. Heat a grill pan or regular frying pan over medium-high heat. Cook the meat in batches until it is cooked through and has a nice grill surface. Remove the meat from the pan and let it rest for a few minutes.
5. Heat the tortilla bread according to the instructions on the packet.
6. Fill the tortillas with the grilled meat. Top with fresh coriander, pineapple chunks and squeeze over lime juice.
Serve delicious tacos al pastor with your favourite condiments such as salsa, guacamole, onion, and coriander. Enjoy flavourful Mexican tacos at home!
