This big chili considered a gastronomic heritage of humanity, originates from the state of Puebla, a gastronomic cradle of delicious recipes. Poblano pepper has inspired many to create countless recipes, the most popular of which is  "Chili filled with cheese in tomato sauce", the "stuffed chile with meat, fish or vegetables",  the  "Strips of Poblano with Potatoes or the famous Poblano Cream. It is a " different flavor of chili, which gives us some sweet tones and little of acid, some of them stronger hot, some less. Its preparations usually carry a touch of gastronomic entertaining and interesting folklore. It is a chameleon chili because the same one, but dehydrated, has the nickname Chile Ancho or Mulato depending on the species. In other regions of the country is also known as Chile Joto or Chile Corazón.
