The Red Rajas are Jalapeno Peppers that have been left to mature to full, until the moment the green Jalapeño Chile has completely transformed its red color. It is basically used for making red salsa, for what are usually crushed or ground with red tomatoes. This intense reddish salsa becomes one of the most used to flavor many Mexican snacks. For other dishes can be used as a flavoring-seasoning sauce for grilled meats or fish, or to add flavor and color to rice in different recipes.
